Sour Chicken

Hashed Potatoes

  • 2 big potatoes
  • 4 eggs
  • mexican-style shredded cheese, 1/2 cup
  • salt and black pepper to taste
  • vegetable oil or butter to fry your eggs
  • optional: cooking spray

Peel and cut potatoes into thin french fries. Microwave at high for 5 minutes.

On a 9x9 square glass baking dish, cover the bottom of the glass baking dish with half of the cheese (if you are concerned about the cheese sticking, before putting the cheese in, spritz a bit of cooking spray). Layer over with potatoes. Then layer in the rest of the cheese.

Sprinkle with pepper. Place in pre-heated 375° oven for 15 minutes. Fry the eggs in a small amount of oil, and add salt and pepper to taste. Place the fried eggs over the potatoes and cheese and serve.
